Breakfast Muffins

Wholesome, lightly spiced muffins packed with grated carrot, apple, and banana ā€” naturally sweetened with maple syrup and topped with pumpkin seeds for crunch. Perfect for lunchboxes, quick breakfasts on the go, or an afternoon snack with a cup of tea.
Makes 6 large muffins or 12 small.


Ingredients
ā— Ā¾ cup plain flour
ā— Ā¾ cup wholemeal flour
ā— 1 tsp baking powder
ā— Ā½ tsp baking soda
ā— 1 tsp ground cinnamon
ā— Ā¼ tsp ground ginger
ā— 2 chook eggs
ā— ā…“ cup milk
ā— Ā¼ cup maple syrup
ā— Ā¼ cup coconut oil, melted (or light olive oil)
ā— 1 tsp apple cider vinegar
ā— 1 carrot, grated
ā— 1 apple, grated
ā— 1 banana, mashed
ā— Ā¼ cup chopped dates (optional)
ā— Pumpkin seeds, for sprinkling on top
