One of the oldest grains in the world, millet flour is a naturally gluten-free flour with a subtle sweet, nutty taste and great nutritional content. Containing a good source of protein, amino acids, dietary fibre and magnesium, it is also an easily digestable flour. Use in sweet or savoury baking. Used alone, millet flour may work in certain recipes, like those for pancakes or tortillas. However, for other baking or cooking projects, millet flour tends to require some type of binding agent like guar gum. Due to it's slightly sweet flavour, you can often cut sugar in recipes when you use it. It can also be mixed with other flours to produce lower carbohydrate levels in breads.
