Blackstrap* Molasses is the dark, sweet, syrupy byproduct made during the extraction of sugars from sugarcane and sugar beets. Molasses has a rich history in the Caribbean and Southern United States, and is often found in Southern style recipes such as baked beans & barbecue sauce. It's also perfect for old-fashioned recipes of baked goods like gingerbread, as well as other dishes that benefit from its dense sweetness.
* The residue left after the third and final boiling of sugar syrup to extract crystal sugars at the sugar refinery. This is what goes into essentially any product labelled as blackstrap in NZ that is for human consumption. It also contains significant amounts of minerals and nutrients, but without the salty bitterness.
